Father's Day Recipes

So here's some recipes I made for Michael for Father's Day that some of you requested. He's doing really well with his eating, and not eating at night so he deserved a little saying it with food!
Philippine Stew
3 lb pork/sausage 2 cups chopped onions 1 clove minced garlic 4 cups water 2-22 oz. cans chopped tomatoes 4 cups potatoes, cubed 2 Tbsp soy sauce 2 each chicken bullion cubes ½ tsp garlic powder ¼ tsp pepper 3 10 oz packages frozen chopped spinach, thawed and drained. Mozzarella cheese Parmesan cheese
Cook pork over medium heat and drain. Add onion and garlic to pork and brown. Add water and scrape drippings from pan. Add remaining ingredients except spinach and cheese. Cover and simmer 20-25 minutes until potatoes are tender. Stir in spinach and cook 2-3 minutes more. When serving, top with 2 Tbsp Parmesan cheese and 2 Tbsp shredded mozzarella. Warm in oven to melt cheese.
7 Layer Magic Bars INGREDIENTS • 1 1/2 cups graham cracker crumbs • 1/2 cup margarine, melted • 1 cup chopped walnuts • 3/4 cup semisweet chocolate chips • 3/4 cup butterscotch chips (I used Heath bits for Michael) • 1 1/2 cups flaked coconut • 1 1/3 cups sweetened condensed milk DIRECTIONS 1. Preheat oven to 350 degrees F (175 degrees C). 2. In a 9 x 13 inch pan pour in melted margarine. Sprinkle the graham cracker crumbs evenly over the margarine. Next place the chopped nuts over the crumbs, and spread the chocolate and butterscotch chips over the nuts. Add the coconut over all, and pour the milk evenly over the top. 3. Bake 25 to 30 minutes or until lightly brown on top. Cool at least 20 minutes then cut into desired sized bars.
